Microgreens are young vegetable plants that are harvested just a few weeks after germination, while they are still in their early stages of growth. However, microgreens are not just ordinary vegetables, they are real works of art due to their vibrant colors, delicate textures and concentrated flavors. Compared to its mature counterparts, microgreens offer an intense flavor, which is why many often use them as a decoration or ingredient in salads, sandwiches, soups and various other dishes.
These vegetables are harvested in their early stages because then they contain a high concentration of essential nutrients, including vitamins, minerals and antioxidants. Although the nutrient content varies depending on the particular type of plant, microgreens are generally rich in vitamins C, E and K, as well as beta-carotene and lutein.
Popular types are broccoli, kale, radish, rocket, coriander, basil and mustard greens. They are easy to grow, which is why we can often find them in gardens or smaller urban farming systems.
